If you like Orange Creamsicle You have got to try these Cupcakes!
What you will need for cake mix:
2 boxes of Betty Crocker Super Moist White Cake Mix
1 Can or bottle of 12oz orange soda
1 can or bottle of 12 oz vanilla soda or cream soda (I used cream)
You will need 2 bowls to mix the cake mixes separate
Take 1 cake mix and mix it with the orange soda blend with mixer about 3 minutes (and nothing else)
Take 1 cake mix and mix it with the cream/vanilla soda, blend in mixer about 3 minutes (and nothing else)
Get a cupcake pan (I used the large ones, you will get less cupcakes with the large ones, I also used large cupcake papers)
Place your cupcake papers in the pan , then I used a Two Tone Cupcake insert to separate the batter mixes in the the cupcake papers.
Place the Two Tone Cupcake Insert into a cupcake paper in the pan
You place the orange batter in the holes around the edges, then the vanilla batter in the middle. Let settle for a minute then remove. (repeat until you have your desired amount of cupcakes or run out of batter, you will have more vanilla batter left over) You could also layer if you do not have the Two Tone Cupcake Insert.
When you get your papers filled you will need to bake in the oven at 350 degrees for around 15-20 minutes (depending on your oven, so check frequently)
When done take out and let cool
Frosting (Vanilla Buttercream):
1 Cup (2 sticks) of unsalted butter softened
6-8 cups of Confectionery Sugar (depending on thickness)
1/2 cup of milk
2 teaspoons of vanilla extract
Place the 1 cup of butter in a bowl
Add 4 cups of the confectionery sugar
Add 1/2 cup of milk
Add 2 teaspoons of Vanilla Extract
Mix with an electric mixer until well blended and smooth (about 4-5 minutes)
Slowly add 1 cup of the confectionery sugar at a time, mix again for 2 minutes.
Add the other cup if needed, mix after adding each cup to you get to your desired spreading consistency (you may not need to add all of the sugar)
Split the frosting in half (you may need to do a double batch if you are making large cupcakes)
You will need to color one of the frosting with Orange food coloring (liquid or gel) to your desired shade of Orange
Directions for frosting:
You will need 3 1/2 inch decorating bags and one large star tip (there can be found as kits at Wal-Mart and Michaels )
Fill one bag halfway with orange and another with white
Cut ends of both bags 1/2 inch up
Take 3rd bag and cut end large enough for the tip of the star decorating tip to fit through. (be careful not to cut it to large)
Slide both frosting bags into the bag with the decorating tip
Twist end of bag and squeeze until you see both white and orange at the end of the tip
Now you are ready to frost
Start at edge of cupcake and swirl around ending in the middle. Have fun and be creative
I also used the orange slices to decorate the top with.
