Instant Pot New England Clam Chowder

I am a new owner to the Instant Pot. I have a love for Clam Chowder so I thought I would try to make it in the pot. I have to say it came out Great!

Its a great hearty soup to have on a cold chilly day.

What you will need:

1 lb of bacon ( can use 1/2 pound if you do not want to put some on the top)

1 onion (I used a small one due t the fact I am not a big fan of onion)

3-cans (10 oz) of clams

3- 1/2 cups of potatoes cut in cubes

2 tbs of salt

2 tbs pepper

1 cup of milk

1 cup of half and half

4 cups clam juice ( you will get most of this from your cans of clams, mix the clam juice with water to make the 4 cups)

1- 1/2 tbs Adobo Seasoning ( if you have the one with pepper do not use all 2 tbs of pepper)

Instructions 

Put your Instant Pot on Saute and Saute the bacon until crispy

Drain most of the grease, but leave some in there to saute your onions

Take out half of the bacon ( this is where you would save some for the top f the soup when it is done, if you do not want to top the soup then just use a 1/2 pound and leave all of it in there)

Saute your onions for 2 minutes in the bacon grease

Take your potatoes and peel and cube them to make 3 1/2 cups

When Onions are done add your 4 cups of Clam juice and 3 1/2 cups of potatoes

Add Pepper and Salt

Put your Instant Pot on Soup for 15 minutes then do a quick release

Add your cup of Milk, Half and Half. Then add Clams and Adobo

I put the Instant Pot back on Saute to heat it back up

If your chowder is not as thick as you want it you can do a cornstarch and water mixture to make it thicker. Do a little at a time and wait a minute before adding more. Do that until you get to your desired thickness.

Spoon up your soup and add bacon to the top along with oyster crackers (also if you feel yours needs more seasoning add to taste)

I served mine with cheesy garlic toast
