The Looneyspoons Collection! – Open to US & Canada!
You may be wondering Looneyspoons what’s that? Well if you’re Canadian you will get the connection right away and if you’re not you may still guess but for those who don’t know our $1 dollar coin is nicknamed the Loonie 🙂 These lovely ladies Janet & Greta have brought us book full of delicious recipes with fun and memorable recipes names like “Hail Caesar!” & “Obi Wonton Kenobi” and so many more. I had just as much fun reading the titles, nutrition nuggets, recipe tips and so much more.
It really is more than just a cookbook it’s a fun and entertaining read that offers some healthy tips for some of your old time favorites. Now don’t think because they have healthy tips that this means not as tasty as that is not so. I have to date tried out at least 5 recipes and they have all passed the yummy taste test in this house. This is no small feat as my husband and daughter can be picky they’ll take taste over nutrition any time but I like to sneak in the healthy stuff, what they don’t know won’t hurt them. Now read on and I’ll tell you some more wonderful stuff (can you tell I love this book?) and of course enter the giveaway!

Moist banana-blueberry muffins with oats and flaxseed
Youâ€™ll be blown away by the great taste and moist texture of these banana-blueberry muffins! Flavor explosion! Ka-pow!
- 1 cup quick-cooking rolled oats (not instant)
- Â½ cup each all-purpose flour and whole wheat flour
- Â½ cup granulated sugar
- Â¼ cup ground flaxseed or wheat germ
- 1Â½ tsp baking powder
- 1 tsp baking soda
- Â½ tsp salt
- 1Â½ cups mashed ripe bananas (about 3 large or 4 small)
- Â¼ cup butter, melted
- 1 egg
- 1 cup fresh or frozen blueberries
Preheat oven to 375Â°F. Spray a 12-cup muffin tin with cooking spray and set aside.
Combine oats, both flours, sugar, ground flaxseed, baking powder, baking soda and salt in a large bowl. Mix well and set aside.
In a medium bowl, whisk together bananas, butter and egg. Add banana mixture to dry ingredients and stir just until dry ingredients are moistened. Gently fold in blueberries.
Divide batter among 12 muffin cups. Bake for 20 minutes, or until a wooden pick inserted in the center comes out clean. Cool on a wire rack.
Makes 12 muffins
Per muffin: 183 calories, 5.7 g total fat (3 g saturated fat), 3.7 g protein, 30 g carbohydrate, 3.1 g fiber, 26 mg cholesterol, 209 mg sodium
